Creamy Tarragon Chicken

Creamy Tarragon Chicken

Cooking time approx. 15-20 mins

Serves 2 people

Ingredients

  • X2 chicken breast, diced
  • 150g of buttercup mushroom, cut into ¼
  • 150g of baby pickled onion, cut into ½
  • 300ml of fresh double cream
  • Handfull of fresh tarragon, roughly chopped
  • X2 tablespoons of oil
  • X1 chicken stock cube
  • Salt & pepper, for seasoning

Method

  1. Heat a large frying pan with the x2 tablespoons of oil
  2. When frying pan is hot, add the chicken, mushrooms and onions
  3. Cook for about 10 mins until the chicken is lightly brown
  4. Pour over the cream and let it simmer, not boil
  5. Add the chicken stock cube by crumbling it in and stir into the cream
  6. Add sale & pepper and fresh chopped tarragon. Stir in and cook out for about 5 mins
  7. Serve with steams rice or pasta!
