An old fashioned roast. The flat ribs are not a carving joint, but are roasted and served individually. They require a long slow roast around 3 hours at 160 degrees celsius, for example. There is growing trend to part-cook the ribs for 2 hours, then marinade over night and finish off on the BBQ. Try something different!
