Cooking and serving a Christmas goose can be a festive and delicious centerpiece for your Christmas meal. Here are five key points to consider:

Selecting and Preparing the Goose:

Choose our high-quality, fresh geese for the best flavour. A goose weighing around 10-12 pounds is typically suitable for a family meal. Before cooking, remove excess fat from the cavity and neck. Prick the skin all over with a fork to help release the fat during cooking. Consider marinating the goose overnight in a mixture of herbs, spices, and citrus to enhance its flavor.

Seasoning and Stuffing:

Season the goose generously with salt, pepper, and any preferred herbs or spices. Common choices include thyme, rosemary, and sage.
Stuff the goose cavity with aromatics like citrus wedges, onion, garlic, and herbs. This will infuse the bird with additional flavor during roasting.

Roasting Techniques:

Pre-heat your oven to a high temperature (around 425°F or 220°C) for the first 20-30 minutes to help crisp the skin. Then, reduce the temperature to around 325°F (163°C) for the remainder of the cooking time. Place the goose on a rack in a roasting pan to allow air circulation and even cooking. Baste the goose with its own juices or a flavourful liquid, like broth or wine, during the roasting process to keep it moist and add more flavour.

Cooking Time and Doneness:

Roast the goose until the internal temperature reaches around 165°F (74°C) in the thickest part of the thigh. This may take 2.5 to 3.5 hours, depending on the size of the goose. Allow the goose to rest for at least 20-30 minutes after removing it from the oven. This lets the juices redistribute, resulting in a juicier and more tender bird.

Presenting and Serving:

Carve the goose into slices, similar to carving a turkey. Serve it on a festive platter garnished with fresh herbs and additional citrus slices for a decorative touch. Accompany the goose with traditional holiday side dishes like roasted vegetables, stuffing, cranberry sauce, and gravy.

Consider pairing the Christmas goose with a complementary wine, such as a rich red like Cabernet Sauvignon or a festive sparkling wine.
