Ultimate Bacon Breakfast Traybake

All the best bits of a cooked breakfast in one roasting tray: crisp bacon (streaky and back), juicy sausages, tender potatoes and perfectly set eggs, finished with a light honey-apple glaze.

Ingredients

  • 200g Unsmoked Streaky Bacon
  • 200g Smoked Back Bacon
  • 8 Breakfast Sausages (or 12 Chipolatas)
  • 600g baby/new potatoes, halved
  • 1–2 tbsp Goose Fat (for potatoes)
  • 4 Medium Eggs (or 4 XL Eggs)
  • 2 tbsp Local Kent Honey (for finishing)
  • 3 tbsp Pure Apple Juice (for finishing)
  • Sea salt & freshly ground black pepper
  • Optional: cherry tomatoes or mushrooms to roast alongside

Method

  1. Heat the oven to 220°C (fan 200°C). Toss potatoes with Goose Fat, salt and pepper on a large tray; roast for 12 minutes.
  2. Add the Breakfast Sausages (or Chipolatas) to the tray; roast for 8 minutes.
  3. Nestle in the Unsmoked Streaky Bacon and Smoked Back Bacon; roast for 6–8 minutes until the bacon is nearly crisp.
  4. Make four small gaps and crack in the Eggs. Return to the oven for 4–6 minutes, or until the whites are set and the yolks cooked to your liking.
  5. Warm the Local Kent Honey with the Pure Apple Juice in a small pan until fluid. Drizzle lightly over the bacon and sausages.
  6. Season to taste and serve straight from the tray.
