Grillmaster BBQ Sharing Board with Goose-Fat Potatoes

A proper butcher’s BBQ feast made easy at home: the Grillmaster BBQ Meat Box cooked into a generous sharing board with beef burgers, lamb koftas, lamb kebabs, pork ribs, chicken drumsticks, pork kebabs and Welsh Dragon sausages. Serve with crisp goose-fat potatoes and a quick honey-apple BBQ mop for a relaxed garden feast.

Ingredients

  • 1 Grillmaster BBQ Meat Box
  • 1.2kg baby potatoes or new potatoes, halved
  • 2–3 tbsp Goose Fat
  • 1 tbsp Meat Seasoning
  • 1 tsp Mixed Herbs
  • 2 tbsp Local Kent Honey
  • 3 tbsp Pure Apple Juice
  • Sea salt & freshly ground black pepper
  • Burger buns, flatbreads or rolls, to serve
  • Salad leaves, coleslaw or grilled vegetables, to serve

Method

  • Heat the BBQ for two-zone cooking: one hot side for searing and one cooler side for slower cooking. If cooking indoors, heat the oven to 200°C fan and use a grill pan or heavy frying pan for finishing.
  • Toss the potatoes with Goose Fat, Meat Seasoning, Mixed Herbs, salt and pepper. Roast in a tray for 35–40 minutes, or cook in a foil tray on the cooler side of the BBQ until golden and tender.
  • Mix Local Kent Honey and Pure Apple Juice in a small pan or heatproof bowl to make a quick BBQ mop. Warm gently until loose and glossy.
  • Start with the chicken drumsticks and pork ribs, as they take longest. Cook over the cooler side of the BBQ for 25–30 minutes, turning often, until cooked through and lightly charred. Brush with the honey-apple mop for the final 5 minutes.
  • Add the sausages, lamb kebabs, pork kebabs and lamb koftas. Cook for 10–15 minutes, turning regularly, until browned, juicy and cooked through.
  • Cook the beef steak burgers last over the hotter side of the BBQ for 4–5 minutes per side, or until cooked through and well-seared.
  • Move cooked items to a warm tray as they finish so everything stays hot while you complete the board.
  • Pile the BBQ meats onto a large serving board or platter with the goose-fat potatoes, salad, buns and flatbreads. Brush with a little extra honey-apple mop before serving.
  • Serve straight away as a relaxed BBQ sharing board, letting guests build burgers, kofta flatbreads and loaded BBQ plates.
