The chine bone is removed and the standing rib bones are exposed at the ends to make a really easy to carve rib that still has some of the bone. This joint looks stunning and has that great rib flavour. Aged for 4-6 weeks.

I’ve used Ian Chatfield before and never had any complaints so as a special treat I ordered a rib of beef French trimmed was very delighted when it was delivered looked like a good piece of meat and used it on my BBQ/smoker slow cooked most of the day the end product was delicious and have recommended to work mates.
Fantastic service, good price. The meat was fabulous, it was tasty, cooked well. Everyone loved it, it was a real hit!
